Coombe Dean School teaching kitchen 
Coombe Dean School approached Bartletts with two kitchens that needed designing; both to be used for teaching purposes, but both to be very different in their design.

The first kitchen was to be designed to allow children to be taught to GCSE level and therefore preparation space was of paramount importance, along with basic cooking equipment.

To achieve the above, Bartletts came up with a design to give twelve independent preparation stations, each incorporating preparation sinks and preparation tables, along with twelve cook stations, each incorporating a Falcon Dominator four burner range; these were supplemented with four Falcon Dominator salamander gas grills, mounted at high level.

The second kitchen was to allow education to be progressed to NVQ level and therefore equipment needed to be of the standard generally found in commercial kitchens.

The design of this kitchen revolved around a central island cook suite, with preparation stations around the perimeter of the room to give the greatest flexibility for student use.

The catering equipment selected for this kitchen was from the Falcon food service range and included the latest Falcon Genius steam combination oven, Falcon’s energy efficient Infinity fryer, as well as a complete range of Dominator cooking equipment, including solid top ranges, pasta boiler, gas chrome topped griddle, convection oven, salamander grill and the latest low energy induction hob.

Bartletts also designed and installed the full extract canopy systems and fresh air supply for both kitchens which are interlocked and designed to fully comply with specification DW172. To aid energy efficiency and maintain the most comfortable environment in the kitchens, Bartletts utalised the latest Genesis interlock system to control fan speeds in relation to the amount of gas being used. This system minimises the amount of extract air taken out of the kitchen and fresh air being brought in therefore directly reducing the level of heating required in the rooms, by restricting the fan speeds the system also minimises the problems of cold draughts.

The second kitchen also benefited from a pass through Hobart dishwasher, which incorporates an automatic energy saving setting for times when the dishwasher is not in full use.
